Preparation. Tiramisu

Who has not tried this gentle and delicious dish ever – do not know what a real dessert! Lush, with a gentle cream of the cream cheese and mascarpone, soaked coffee, biscuits Savoiardi that just melts in the mouth – the most popular Italian dessert tiramisu.


  • Mascarpone Cheese – 500g
  • Cookies Savoiardi – 400g
  • Eggs – 5 pcs
  • Cream – 250 ml
  • Sugar – 250 g
  • Powdered sugar – 175 g
  • Cooked organic coffee – 400 ml
  • Cocoa powder – 100g
  • Flour – 350 g
  • Salt – a pinch
  • Peppermint – for decoration

For cookie Savoiardi:

  • Eggs – 4 pcs
  • Sugar – 250 g
  • Flour – 350 g

Mascarpone at home:

  • Cream 33% – 750ml
  • Juice of ½ lemon


Homemade Mascarpone cheese. Pour the cream in a saucepan and start to warm up over medium heat, without boiling. When the first bubble, add the juice of half a lemon. Cook, stirring constantly, for 10 minutes until the consistency of thick cream. Fold the cheesecloth into four layers of cheese and strain off the excess whey. Do not wring, cover with gauze and leave for 1 hour. Once the cheese has cooled, put it in the fridge for 40 minutes.

Savoiardi Cookies. Whisk whisk yolks with the sugar until it dissolves. The protein with a pinch of salt whisk mixer until cool foam, gradually increasing speed. On stage, the foam gradually add the sugar (125g) and continue beating.

Tip: bring down the proteins in the same direction, so as not to destroy the air bubbles. To cook biscuits well kept form, proteins do not have to drop out of the bowl, if you turn it upside down.

To when baking cookies were porous, add the yolks and whites to mix spatula from top to bottom. Stir portions sifted flour into the egg mixture and knead the dough until thin consistency. Cream. Mix the icing sugar with the egg yolks. Whisk cream mixer for about 5 minutes. Pour the egg yolks to the cold cheese and mix until completely dissolved mascarpone. Then, add a little cream and knead to the consistency of thick cream.

Tip: To tiramisu cream to get a tight, mascarpone cheese should be cold.

Formation dessert. Grease a high-sided shape with a thin layer of cream. Dip each Savoiardi 2 seconds in cold coffee. You can put the cookies close together on the form. Cover the cream layer and then lay soaked biscuits. You can put the cookies in tiramisu in 3 layers to the lower layers do not become limp. Put in the fridge for 15 minutes. pritrusite cocoa and garnish with mint before serving.
