Beetroot jam with lemon and mint
Your kids do not like beets? Prepare this delicious and healthy dessert – beetroot jam with lemon and mint for them.
- Beets - 0.5 kg
- Mint - 50 g
- Sugar - 1 tbsp.
- Water - 250 ml
- Agar-agar - 0.5 tsp
- Balsamic vinegar - 2 tbsp
- Lemon - 1 pc
- Vegetable oil - 2 tbsp
Preparation. Beetroot jam with lemon and mint
Beets peel, wash and cut into cubes. Mix beets with sunflower oil and sugar. Put on a baking sheet and bake 15 minutes at 220 degrees.
Tip: To get rid of an unpleasant earthy beets taste – caramelizing it.
Agar dilute with water. In a saucepan, combine the sugar and water, add the mint leaves and roasted beets. Simmer 20 minutes. Next, add the lemon juice and zest, and agar-agar, as balsamic vinegar. Cook until done for another 3-5 minutes. Remove mint leaves and pour into sterilized jars, tightly roll up the cover.
