  • fresh frozen mussels – 12 pcs
  • Squid – 2 pcs
  • Shrimp – 12 pcs
  • Rice – 500 g
  • Fish set – 1 pc
  • Chicken thighs – 2 pcs
  • Onions – 1 pc
  • Garlic – 1-2 cloves
  • Tomatoes – 3 pieces
  • Green beans – 200 g
  • Oil – 4 tbsp
  • Dry white wine – 200 ml
  • Turmeric – 2 tsp
  • Paprika – 1 tsp
  • Salt – 15 g


Mussels clear of “beard” (accumulation of algae), cover with cold water and boil that washed all the sand. Ready Transfer mussels to a bowl, broth, strain through cheesecloth with a sieve.

Tip: do not take cooking peeled boiled mussels, they have lost all the juices and flavor. Seafood advance thaw in the refrigerator on the top shelf.

Fish set wrap in cheesecloth and put in the broth, add water and cook for 30 minutes over low heat. Remove the fish and add the white wine, bring to a boil, boil for another 3 minutes.

Chicken leg separate from the bone, cut into 4 pieces. Fry on a hot frying pan until golden brown, transfer to a bowl.

In the squid, remove the hard chitin plate and clean the film. Cut into two halves, on the inside make the notch 1.5 cm. Put down the notch in the pan, fry for 1-2 minutes.

Shrimp clean from the shell, remove the esophagus. Fry for 1-2 minutes until red.

Crumble onions, saute with garlic squeezed. Tomatoes rub on a small grater, add to the onions. Season with turmeric, paprika. Constantly stir the mass of thickened. Rice rinse until transparent and add to the tomato mass. Spread the rice evenly over the pan and cook for 3-4 minutes until golden brown. Pour fish broth, salt, do not stir, otherwise damage the crust. Add the chicken, cook for 10 minutes. When the rice is ready, add to the paella the following products: halves of mussels (8 min.), Frozen green beans (5-6 minutes), Shrimp (4 min.), Squid (2 min.). Towel moisten with water, cover the paella, close the lid, put on a baking sheet with cold water for 10 minutes. Before serving, garnish with cherry tomatoes, fresh herbs and drizzle with lemon juice or lime.

Tip: To easily shift the finished paella in a pan, put the pan with paella in cold water.
