Preparation. Classic Smetannikov


  • Sour cream – 350 ml
  • Sugar – 300 g
  • Eggs – 3 pcs
  • Vanilla sugar – 1 tsp
  • Butter – 200 g
  • Cocoa – 100g
  • Baking powder – 2 bags
  • Flour – 450 g

For the cream:

  • Sour cream 25% – 500g
  • Sugar – 150 g
  • Vanilla sugar – 1ch.l.
  • Juice of ½ lemon


Mixer whisk eggs with sugar until thick foam, add the well-melted butter, vanilla sugar, continue beating. Gradually add the cream, so it will be easier to mix with other ingredients. Divide the sour cream dough into two parts. In the first bowl, add 9 tablespoons flour and 1 tsp baking powder, knead with a spoon. Mix 5 tablespoons flour, 4 tablespoons sifted cocoa, 1 teaspoon baking powder and add the ingredients in a second bowl.

Lubricate the form of cakes with vegetable oil. Put the two types of the dough into the molds. Cover with parchment, oiled side – down. Bake two cakes at the same time at 180 degrees for 30 minutes. Willingness to check toothpick cakes, it should be dry.

Tip: at the beginning of the baking process, the oven must be cold to Smetannikov well risen. The dough so you can add the poppy, berries, raisins, nuts, candied fruit.

Formation of cake. Vyymite cakes from the mold and cut lengthwise into two parts. Grease bottom of the dish with cream, put chocolate cake, brush with cream. Cream. Mixer whisk the cream with the sugar, add the lemon juice. Beat for about 5 minutes until thick homogenous.

Tip: sour cream should always be cold, so the cream does not exfoliate and turned homogeneous. To thicken the cream, add the lemon juice.
