Lemon cake

My favorite dessert of all the sweet tooth. The neat rectangles of tender dough crumbling soft crumbs and immediately melting in the mouth, and above it a light protein generous layers of cream with delicate citrus aroma.


  • For the dough:
  • Flour - 500 g
  • Baking powder - 1.5 tsp
  • Sugar - 150 g
  • Salt - a pinch
  • Butter - 100 g

  • Sour cream 20% - 200 g
  • For the cream:
  • Egg whites - 4 pieces
  • Sugar - 200 g
  • Lemon juice - 2.5 tbsp
  • For lemon Kurd:
  • Egg yolks - 4 pieces
  • Sugar - 380 g
  • Lemon (juice and zest) - 2 pcs
  • Butter - 200 g

Preparation. Lemon cake

Lemon Kurd. Grate lemon rind, squeeze out the juice. In saucepan, bring to a boil juice, sugar and zest. Mash yolks with sugar. Connect the yolks with the hot juice and boil, stirring constantly. Ready cream, strain through a sieve. Add the butter at room temperature. Tighten the body cream wrap and refrigerate.
