Georgian dish on your desk. Aromatic, rich in herbs and spices – famous lobio.
- Red beans - 150 g
- Onions - 1 pc
- Carrots - 1 pc
- Stalk celery - 1pc
- Prunes - 100 g
- Wine vinegar - ½ cup
- Garlic - 3 cloves
- Tamarind - 1 tbsp
- Chili - ½
- Coriander - 1 tsp
- Fenugreek - ½ tsp
- Walnuts - ½ cup
- Olive oil - 5 tbsp
Pre-soak the beans in cold water overnight. Boil for 40 minutes, drain, rinse the beans and cook another new water for 30 minutes.
Tip: If you forget to soak the beans overnight – fill it with warm water for 15 minutes and cook as usual.
Mix fenugreek seeds of coriander, fry over medium heat. The stems and celery root, carrots and onions cut into cubes. Mix the spices, add vegetable oil, garlic and hot peppers. For vegetables, add the boiled beans and spices. Pour a little water and simmer lobio. Add a little pasta.
Paste. Prunes pour wine vinegar and completely evaporate.
Nuts, spices prescription, tamarind, prunes, garlic and olive oil in a blender to kill the puree.
Serve lobio in pots with pita bread, garnish with chopped green onions and cilantro leaves.
