Pies on kefir

Porous, lush, with a thin crispy crust, fried to dovetail rosy grandmother’s pies on kefir.


  • Kefir 3,2% - 250 ml
  • Flour - 400 g
  • Salt - 1 tsp
  • Soda - 0.5 tsp
  • Sugar - 1 tbsp
  • Eggs - 1 pc
  • Vegetable oil - 35 ml
  • Sour cream - 50 ml
  • Filling with potatoes:
  • Potatoes - 500 g
  • Salt - 1 tsp
  • Onions - 1 pc
  • Dill - 3-5 sprigs
  • Filling with cabbage:
  • Cabbage - 250 g
  • Onions - 70 g
  • Carrots - 75 g
  • Tomato paste - 2 tbsp
  • Salt
  • Pepper
  • Vegetable oil - 35 ml
  • Butter - 20 g
  • Filling of pears:
  • Pears - 300g
  • Butter - 20 g
  • Sugar - 16 g
  • Vanilla sugar - 8 g

Preparation. Pies on kefir

Dough. In a saucepan, combine the sour cream and yogurt, heat for 2-3 minutes on low heat so that the mass is not stratified. In the warm mass, add salt, sugar, lightly beaten egg yolk and vegetable oil. Next, add half of the flour, baking soda, and then the remaining flour. Grease your hands with oil while kneading the dough, the dough is not sticking. Stir the dough tighten with cling film and leave for 15 minutes at room temperature to infuse.

Tip: To patties were lush, take expired yogurt. instead expired yogurt or fermented baked milk, such as sour milk in the same proportion. Do not use butter, cakes will be firm. In the refrigerator, do not place the dough, baking soda will react slowly and the dough will not lush.

Squeeze the dough balls, stretch them on the cake. Pour the filling over the dough and shape into patties. Fry patties seam side down for 3-4 minutes on each side.

Potato filling. Peel the potatoes and cook, the ceiling in the mashed potatoes. Fry onion in vegetable oil until transparent. Dill finely chop. Mix all ingredients.

Tip: To filling was not moist and sticky, take washed and dried dill.

Cabbage filling. On the creamy vegetable oil fry the onions and carrots, add the cabbage, salt and pepper. Simmer over medium heat for 10 minutes. Add the tomato paste.

Filling of pears. Clean the bulb from the seeds and cut into cubes. Fry in butter over medium heat. Then add the sugar and vanilla sugar, caramelizing pear within 2 minutes.

Tip: Instead of pears – apples, plums, quince. Any method of sculpting suitable for any toppings.
