Preparation. Donuts

They love adults and children. Sell them on the street and served in the most expensive restaurants in the world. Ethereal, tender and incredibly tasty – donuts!

• Flour – 500 g
• Sugar – 100 g
• Instant dry yeast – 2 tsp
• Milk – 200 ml
• Eggs – 2 PCs
• Butter – 100 g
• Vegetable oil – 300-500 ml
• Salt – a pinch
For Orekhovo-Apple paste:
• Apples – 2 PCs
• Walnuts – 50 g
• Dried apricots – 50 g
• Raisins – 50 g
For cherry glaze:
• Sugar powder – 150 g
• Cherry juice – 2 tbsp
For the lemon glaze:
• Eggs – 1 PC
• Sugar powder – 150 g
• Lemon juice – 1-2 tsp.
For the chocolate glaze:
• Milk – 50 ml
• Cocoa – 3 tbsp
• Sugar – 150 g
• Butter – 50 g
For dusting:
• Eggs – 2 PCs
• Powdered sugar – 500 g
• Lemon juice – 1-2 tsp.
For a start you need to warm the flour to the yeast started. To do this, spread the flour on the baking sheet and put in the oven at 30-35 degrees for 2-5 minutes. Warm the flour, mix with yeast, sugar and salt.
Tip: the yeast is not killed, the flour temperature is not above 50 degrees.
Milk and eggs, whisk until thick fluffy foam. Parts add the flour with the yeast and melted butter. Knead well with your hands. Doughnuts the dough should be elastic and soft – after pressing the dent slowly disappears. The dough cover with a towel, put in a warm place for 1 hour.
The powder. Proteins with a pinch of salt beat with a mixer until rigid peaks. In the protein foam, add the lemon juice and powdered sugar. Divide proteins into three parts. In the first part add cocoa, the second – turmeric. Put frosting in pastry bag and squeeze on the long parchment strips. Leave to dry for 30 minutes. Finely chop or smash the strips.
Tip: for a better solution use powdered sugar, not sugar. For the dye use the dry ingredients to the frosting wasn’t runny.
“Rested dough” obamanite once. Roll out a layer of 2-2,5 cm thick and will punch out a round shape of donuts. Use Tolstoganova pan with high sides. Well heat oil and fry the donuts on medium heat for 1.5-2 minutes. Ball butter 1-2 cm above the donut. Ready donuts put on a paper towel, to soak up the excess oil.
Orekhovo-Apple paste. In a blender kill apples, dried apricots, nuts, raisins to the state of puree.
The cherry glaze. Cherry juice mixed with powdered sugar.
The chocolate icing. Preheat the milk. Add the butter, sugar and cocoa. Cook over low heat until sugar is dissolved.
Lemon glaze. Proteins whisk with sugar and lemon juice.
Fill the donuts with any jam, fruit filling. Dip donuts in glaze decorate with colored powder. Leave on for 20-30 minutes, until the glaze has dried.
