“Turtle” Cake

Preparation. “Turtle” Cake

Indescribably delicious and fabulously delicious – the legendary Turtle Cake!


For the dough:

  • The eggs – 7 pieces
  • Sugar – 200 g
  • Flour – 240 g
  • Soda – 1 tsp
  • Citric acid – ½ tsp

For the cream:

  • Sour cream – 400 ml
  • Butter – 200 g
  • Sugar – 200 g
  • Lemon juice – 1 tsp

For the glaze:

  • Cocoa – 40 g
  • Sugar – 200 g
  • Milk – 150 ml
  • Butter – 100 g


Separate the whites from the yolks. Mixer whisk egg yolks with sugar until fluffy foam. Protein whisk until stable peaks. Protein foam keeps the air in the middle of the cakes during baking. The main thing is not to kill squirrels, and the biscuits will be flat. Part of the beaten egg whites, mix with egg yolks and add citric acid. Sifted flour mixed with baking soda. Add the dry ingredients in the liquid mixture and a second half of the proteins. Mix gently with the top down. Cover the baking parchment and sprinkle generously with flour. Otsadit 1 tsp dough on a baking sheet. Bake for 10 minutes at 180 degrees. Ready biscuits cool.

Tip: to spread over the dough, sprinkle baking flour.

Cream Cake. In various capacities, whisk the sour cream, sugar, lemon juice and soft butter with sugar. Then mix all ingredients until stable peaks.

Chocolate glaze. In a saucepan, mix the sugar with cocoa, pour in cold milk, bring to a boil and boil for 2-3 minutes. Constantly stir. Remove from heat and add the cold butter. Allow to cool to room temperature.

Tip: do not cover the cake frosting hot, otherwise the shell will remain bright spots.

Formation of cake. Each workpiece dip in the cream and place on a dish in the shape of a dome. Place in freezer for 10 minutes or in the refrigerator for 30 minutes. The cooled cake cover with a thick layer of chocolate glaze. Connect the two biscuits with cream – it will be the head of a turtle. Two biscuits, cut in half – it’s paws. The latter biscuits shape the triangle – is the tail. Details, connect to the carapace. Put for 30 minutes in the refrigerator.

Cake serve it on a large round platter, then cut into pieces a la carte, as a normal pie.
