You know them at first sight among the hundreds of bars, chocolates and cakes on the shelves of supermarkets. They are connected with the sweet memories of childhood. Oblong, crunchy with tender sweet filling, each slice just melts in your mouth. This unmatched wafer rolls!


For the dough:

  • powdered sugar – 200 g
  • egg whites – 8 pieces
  • flour – 150 g
  • Starch – 50 g
  • butter – 25 g

for custard:

  • Milk – 400 ml
  • egg yolks – 8 pieces
  • Sugar – 150 g
  • vanilla sugar – 10 g

for protein cream:

  • Sugar – 300 g
  • egg whites – 2 pcs
  • dark chocolate – 50 g

cream with condensed milk:

  • condensed milk – 1 can
  • butter – 100 g
  • walnuts – 50 g


Dough. Melt butter in a skillet. Proteins whip with powdered sugar and mix with the oil cooled down. Mix the flour with the starch portions and add to the protein-oil mixture. Knead until smooth.

Tip: To use the test all products at room temperature. If you are using a waffle iron – eggs in the dough, add the whole. If baked in the oven, use only the whites. If the dough is obtained by liquid – add flour if thick – milk.

Cover with foil and place in refrigerator for 30 minutes to the wafer does not crumble. On parchment, draw a circle with a diameter of 15 cm, in the center of each circle pour 1.5 tablespoon test, distribute along the contours. Bake for 4-5 minutes until golden brown at 160 degrees. From hot laps at once, create a tube (cone).

Tip: it is necessary to twist the tube once they cool off in 5-7 seconds.

Custard. Milk with vanilla sugar to a boil. Whisk egg yolks with the sugar. Hot milk, pour a thin stream to yolks. Stirring constantly, boil for 3-4 minutes until the cream thickens.

Tip: ready custard store in the refrigerator no longer than 3 days.

The cream of condensed milk. Bank of condensed milk boil over 2 hours, refrigerate. Mix soft butter with condensed milk. Nuts chop with a knife.

Protein cream. On a steam bath to dissolve the proteins and sugar. Beat with a mixer until fluffy foam. Chocolate rub on a small grater.

Ducts (cones) As creams edge garnish with nuts and grated chocolate.
